02 / The problem
Why the last three didn’t stick
Most subscriptions solve for consistency. You get coffee that is reliably good and completely interchangeable, and after two months you cannot remember a single thing about any of it. We solve for the opposite. Each lot should be different enough that you have an opinion about it by the second cup.
What consistency buys you
Reliably good.
Completely interchangeable.
Forgotten inside a month.
Ours: an opinion by the second cup.
Windrow
Single-farm coffee, roasted in small lots

03 / Origin
Mesa Corda, Huila — Colombia
Higher ground is colder, so the fruit ripens slowly and the seed inside stays dense. Dense seed holds acidity. That is the whole mechanism, and it is why we print the metre count on the bag instead of a tasting adjective.

04 / The cone
Pour-over, 300 g
Everything the farm did is already in the seed. The only thing left to get wrong is the water. This is the recipe we cup on, printed on the back of every bag — start here, then move one variable at a time.

Bloom, 50 g
Wet the bed, wait forty seconds. Fresh coffee needs the gas out before it will take water evenly.
Two pours
125 g, let it fall, then 125 g. Pour into the centre and leave the walls alone.
Too sharp?
Grind finer before you add heat. At 1,840 m the acidity is structural, not a fault.

05 / The lots
Three on the shelf · August 2026
We buy whole lots, not blends, so when one is gone it is gone. What follows is the shelf as it stands this morning — elevation, process and days on beds printed the same way every time so you can compare them against each other.
